The perfect table cheese. The milk of this Pecorino is gathered exclusively from one Calabrian farm based in Cassano Ionio (CS) then aged for up to 12 months.
Like most ewe's milk varieties, its surface is a bit oily due to the natural oils in the milk. Lightly sharp in taste is excellent as a snacking cheese, paired with red wine or aromatic honey and also firm enough to grate over pasta.
